We live in a small town, but we are very fortunate to be near this wonderful coffee shop. It’s an old house that’s been redone. Each room if filled with nice comfy chairs and tables where you will find people having meetings, reading or even playing a round of cards. My husband and I love it so much. It reminds us of a little place we went to all the time in Kentucky that was near where I worked. The other reason we love this place is because of the delicious baked goods. They have the most amazing cranberry orange muffins. It is the perfect combination of sweet and tart. After we left the coffee shop the other day my husband vowed that he would to figure out how he could make these at home. Here is the recipe we found that best represented these amazing muffins.
It is important to know that I am not a baker. So, when I find a recipe and it turns out good, it is because it is a good recipe that is simple enough for even the less talented baker.
Cranberry Orange Muffins
2 cups of all-purpose flour
1/2 cup granulated sugar
1/2 cup of firmly packed brown sugar
2 tsp baking powder
1/2 tsp salt
Zest of one orange
1 egg
4 tbsp unsalted butter, melted
1/2 cup of milk
1/2 cup of fresh strained orange juice (about 2 oranges)
1 1/4 cup of fresh or unthawed frozen cranberries

Awe I miss that place it was such a cute coffee shop!! Never tried these muffins but they sound delicious 🙂
